Summer salads are the best! Although Summer has come to an end, you can still play around with versions of this salad through the fall. You can swap out the strawberries for a fresh in-season chopped apple.
4-5 cups Spinach
1 1/2 cup sliced Strawberries or 1-2 apple chopped
Other add-in options: walnuts, sunflower seeds, sliced almonds
Dressing: (this will probably make more dressing than you want on the salad)
1/2 cup Extra virgin olive oil
1/3 cup Balsamic vinegar
2 teaspoons Sea salt
1 teaspoon Onion powder

Some foods are better made by someone else! I love Kale Salad and I really love it when there is apple cider vinegar and nutritional yeast in it for some reason. This healthy salad was picked up at my local New Seasons and I thought I’d give it a whirl. It is gluten-free, dairy free, soy free and local all things I look for when I can. It’s made by Pixie Retreat Rawr.
The ingredients are clean, the texture is awesome. A lot of times kale salads will taste dry and boring. Not this one! Lots of flavor and things to chew on. I ate this size in two sittings (not because I couldn’t have polished off the whole thing in one sitting but I’ve done that before and my digestive system OD’d on kale).
They make a lot of other good-looking products that I’ll be checking out soon too! I recommend this tasty salad for something different. 🙂 Enjoy!
My quickest and favorite salad dressing is so simple. It seems to compliment just about any mix of toppings for a salad and every time I make it for new guests I get rave reviews. Ingredient line up to make a small bottle of dressing 1/3 cup balsamic vinegar 2/3 cup olive oil 1 teaspoon of onion powder 1/2 teaspoon of garlic powder sea salt & pepper to taste Mix it all up in a jar or some sort of container that you can store. You do not need to refrigerate this, it can store fine in your cupboard until you need it. Other dressing ideas & options — you can switch up the flavors so easily!
