I had sausage & beef cooked up already in the fridge. I was wanting something savory and warm. I knew I could whoop something up with my taste buds creating a masterpiece. Here’s what you’ll need to replicate it:
1 lb. cooked meat (I had 1/2 lb of ground beef & 1/2 lb of ground sausage)
butter or another fat of your choice for the squash to get cooked in
Cut up the squash into small cube pieces. Cook the butternut squash at 400 for 15 minutes with the fat of your choice drizzled on the bottom of the pan.
After the squash has cooked, turn the temp down to 375 and cook for another 20 minutes with the remaining ingredients and last cracking and placing the eggs on top.
Check to make sure the eggs are cooked and serve & eat!
Using sweet potatoes or yams in place of butternut squash
Using acorn squash in place of butternut squash
Adding in other vegetables such as zucchini, peppers, carrots would also be tasty

Some foods are better made by someone else! I love Kale Salad and I really love it when there is apple cider vinegar and nutritional yeast in it for some reason. This healthy salad was picked up at my local New Seasons and I thought I’d give it a whirl. It is gluten-free, dairy free, soy free and local all things I look for when I can. It’s made by Pixie Retreat Rawr.
The ingredients are clean, the texture is awesome. A lot of times kale salads will taste dry and boring. Not this one! Lots of flavor and things to chew on. I ate this size in two sittings (not because I couldn’t have polished off the whole thing in one sitting but I’ve done that before and my digestive system OD’d on kale).
They make a lot of other good-looking products that I’ll be checking out soon too! I recommend this tasty salad for something different. 🙂 Enjoy!
YUM! Smoothies are one of my favorite food-drinks. I love how energized and refreshed I am when I drink it. You will be jazzed up with vitamins, quality food and on your way to health. I have used different variations of veggies, fruits and milks (coconut, almond, hazelnut) to create the perfect smoothie. But I think I have it down.
Handful of spinach
Leaf parts of kale (don’t use the spine of the kale)
1 celery stalk
1/3 to 1/2 of a banana or 1/3 avocado for thickness
handful of blueberries
1 cup Canned coconut milk
2 Tablespoons of cocoa powder
