Chocolate Banana-Zucchini Bread

chocolate-zucchini-bananaI’m in a baking mood! And we keep ending up with two sad bananas that don’t get eaten before they are too ripe for my taste buds.

Dry ingredients –
1 1/4 cup gluten free flour
1/2 cup cocoa powder
1/2 cup coconut sugar
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp cinnamon
1/4 tsp sea salt

Wet ingredients –
1 egg
1/2-1 cup shredded zucchini
2 ripe bananas
1 tsp vanilla
1/3 cup melted coconut oil

chocolate chips optional

Mix your ingredients well together. I mixed my wet ingredients into my kitchen aid mixer followed by adding in the dry ingredients and scraped them out into a pan. I like to sprinkle a little sea salt and sugar on top when finished. 🙂
Spray your pan, I used a ceramic pan and sprayed it with oil.
Bake at 350 for about 30-35 minutes or until the middle is clear after you stick a fork in it.
