Updated Chicken & Roasted Veggies

chick.asparagus.potatoLike I mentioned in a previous post, I like to try to make a protein ahead of time to use for fast meals or snacks. I did another batch of chicken breast shredded in the crock pot which saves me time and work. Tonight I roasted vegetables and added my shredded chicken on the side for a rather simple but delicious meal.

Ingredients:
4 organic golden potatoes
1 bunch of broccolini
1 bunch of asparagus
2 breasts of chicken shredded*
Olive oil
Sea salt
Dried onions

Directions:
Turn on oven to 400 degrees
Wash & cut vegetables and place evenly on two baking sheets
Drizzle vegetables with olive oil so they are just slightly wet for roasting
Sprinkle sea salt over all and dried onions over the asparagus
Roast for 20-30 minutes (this will depend on how small you slice your veggies, the smaller they are the quicker they will cook)

Add shredded chicken and done & done!

 

*Shredded chicken directions:
2 chicken breasts
1/2 cup bone broth (chicken or beef or vegetable work great)
Sea salt & pepper
Crock pot

Add everything to crock pot and cook on low for 5-6 hours or high for 2-3 hours. Shred with a fork.
