Chicken Lettuce Wraps

Have you ever had the P.F. Chang’s lettuce wraps? Well recently they were sounding pretty tasty so I figured I could create my own healthier version at home. It has a bit of an Asian flare and are quite delicious! If you have some fresh lettuce from your garden, this is a perfect recipe to use the lettuce.

What you’ll need –
1 lb ground chicken (or turkey)
1/3 cup finely chopped green onions or scallions
5 minced garlic cloves
1-2 Tbsp minced ginger
1 Tbsp coconut aminos
1 Tbsp sesame oil
1 Tbsp honey
1 Tbsp Sriracha
1 Tbsp dijon mustard
1 Tbsp white wine vinegar
1/4 cup chopped cashews
Sea salt to taste

Directions – in a skillet or wok, heat up your sesame oil, add in the ground chicken, cook 85% of the way through.
Add in green onions, garlic, ginger, sauté for another 5 minutes
Add the remaining ingredients and let cook for another 5-8 minutes
Use lettuce leaves to make a wrap with your tasty meat mix

Optional: shred some carrots so you can put them on top of your meat mix in your lettuce wrap and a dash of fresh cilantro chopped to top it off
