I’ve mentioned it before but breakfast is my favorite meal. It is so easy and relatively quick to make a healthy breakfast. For people who feel crunched for time, I promise you waking up an extra 10-15 minutes will be worth the energy it will provide you to get through your day if you make the commitment to do so and make breakfast.
Here’s one of my favorite go-to’s: (for one person)
Large handful of baby spinach
Small handful of chopped onion
4-5 asparagus chopped
1 tablespoon of fat
Sea salt, pepper to taste
Melt the fat in the pan on a medium to low heat
Add in chopped onion, asparagus let them cook for 3-4 minutes
Crack and dump eggs in, using a spatula mix around for another 3-4 minutes
Add in spinach, cook for a final 1-2 or until everything is looking too good to hold back
Sprinkle in sea salt & pepper and any other seasonings you may like
