Sautéed Carrots with Dates in Coconut Oil

Looking for a simple and tasty side dish? Have I got one for you! The sweetness of dates combined with carrots and a dash of sea salt is amazing!
Here’s the line up:
5-7 peeled and thinly sliced carrots
3-4 pitted dates, finely chopped
1 Tbsp coconut oil
Dash of sea salt
Optional – onion powder and dash of pepper

Directions:
Melt the coconut oil in a pan on medium to low heat, add in carrots for 4-5 minutes
Add diced dates, sea salt and optional seasonings, cook for another 3-4 minutes
I like my carrots a bit crunchy still so this was great for me, if you like yours a bit more tender, keep them cooking for a few extra minutes
