Cinnamon, Date Gluten-Free Granola

The smell of cinnamon in the oven hands down is one of the best smells to walk in the house to.  If you are someone who eats oats this recipe is for you, it is simple, tasty and stores well. Not to mention it is very cost-effective, who doesn’t love that? Granola can be a great snack or if you are needing a few extra carbohydrates in your diet, this might be a quality option for you.

Here’s what you’ll need:
3 cups gluten-free organic old-fashioned oats
1/2 cup sunflower seeds
6-8 dates, finely diced
1 Tbsp raw honey
2 tsp cinnamon
2-3 Tbsp coconut oil

A bowl for mixing
Pan for baking
Air tight container for storing

Directions –
Pre-heat oven to 300 degrees.
In a large bowl, combine oats, sunflower seeds, diced dates, honey, cinnamon and coconut oil. With your hands, mix well until the cinnamon and coconut oil have meshed in to all the oats.
Pour oat mixture on a baking sheet and spread it out so the oats cover a thin layer over the entire pan.
Bake for 18-22 minutes, pull out and let it cool before you store in your air tight container.

Serving size about 1/2 cup
