Quick Meal: Chicken, baby kale, cherry tomatoes & olives

This meal can be fast and it can be really really fast. If you have chicken prepped for the week then it will be the really really fast version, if not you’ll end up with the fast version. This can be easy for a lunch on the run or a fast cooked dinner for you and the family. It stores well for the next day too.

Cooked chicken route –

Ingredients:
Baby kale
Cherry tomatoes
Olives
Chicken
Butter (or your choice of cooking fat)
Sea salt/pepper if desired

Cut chicken into small pieces.
Slice tomatoes and olives in half
Place 1 tsp butter in pan, heat up on medium to low
Sauté everything together for 5-7 minutes and chow down.

 

Uncooked chicken route –

Ingredients:
Baby kale
Cherry tomatoes
Olives
Chicken
Butter (or your choice of cooking fat)
Sea salt/pepper if desired

Slice your chicken into thin chunked pieces, cook it in butter or olive oil turning until fulling cooked for 6-9 minutes
Take out chicken set aside
Cut tomatoes and olives in half
Throw in baby kale, tomatoes, olives and cook for 4-5 minutes
Add in chicken cook all together for another couple and you are done!
