30 Minute Dinner: Burger & Veggies

Quick Dinners can come in handy, especially if you are a family running in different directions. Here’s what you’ll need:

burgers – makes about 4 small size burgers
1 lb grass-fed ground beef
half of an onion
1-2 garlic cloves
Cajun spice mix
sea salt
pepper

Burger – chop up the onion into small pieces and mince the garlic. Optional to sauté this before adding it to the ground beef. If you sauté it, mix in a bit of fat (butter, bacon grease, olive oil) to cook it in. In a large bowl, add beef, onion, garlic, spices, sea salt & pepper. Mix well with your hands. Form into small burger patties. Cook on the grill (depending on your grill and temp) for 10-12 minutes a side.

vegetable side –
1 bunch of asparagus
handful of grape tomatoes
1 zucchini
Sea salt, pepper
Extra Virgin olive oil
Balsamic vinegar

Veggies – rinse and cut into small pieces the asparagus and zucchini. Heat stove to medium heat add a splash of water. Let them steam for about 3 minutes. Rinse and cut the tomatoes in half, add to the pan. Let all vegetables cook for another 4-5 minutes adding a little sea salt and pepper. Once they are cooked to your liking, remove from pan and drizzle a little bit of EVOO and a splash of balsamic vinegar.
