Breakfast is an excellent way to start your day on the right foot. Sometimes we feel crunched for time and sometimes we feel a bit bored with our usual morning eats. Here is a list with a few ideas some with eggs, some without and some that you can even prepare the night before in your crockpot. Happy Healthy Eating!
-Boiled eggs & steamed vegetables
-Sliced fruit with walnuts (half banana, three strawberries, blueberries, blackberries)
-Sliced ham, boiled egg, carrots & cucumbers
-Green smoothie: canned coconut milk, cup of spinach, handful of baby kale, 1 carrot, 1/3 cucumber, half celery stalk, 3 strawberries, half banana & ice. I also like to add protein powder and will occasionally add sunflower seeds, pumpkin seeds or flax.
-Pumpkin pancakes: 1/4 c canned pumpkin, 1TBS coconut flour, 1TBS coconut oil or butter, 2 eggs, 1/8 tsp baking soda, 1/4 tsp cinnamon, dash sea salt, mix everything together except a little of your fat to put in the pan to cook the pancake mix in. Cook on a medium-low heat until the mixture starts to bubble and flip over. Enjoy with berries, coconut flakes or some butter!
-Bacon & fried eggs
-Egg, vegetable & meat muffins: You will need a dozen eggs, up to three of your favorite vegetables (I like minced onions, sautéed spinach and chopped tomatoes), and a meat of your choice (I like breakfast sausage, chopped ham or ground turkey), use onion powder, sea salt and any other seasoning you are a fan of. Pour egg/veggie/meat mixture into the muffin pan, cook for 10-15 minutes at 350. *Other great veggie ideas: chopped peppers, diced asparagus, minced or shredded sweet potatoes/yams, finely chopped broccoli
-Breakfast burritos: A couple thick pieces of ham, 2 eggs (scrambled), 1/4 chopped vegetables. Scramble eggs, sauté up the vegetables and roll the inside the ham slice. You can also use a lettuce leaf if you prefer.
-Shredded zucchini with ground sausage: shred zucchini & yellow summer squash, cooked up some ground sausage/turkey/beef. Optional add-ins: shredded carrots, onion, yams/sweet potatoes and top with salsa
-Carrots, cucumbers, celery, broccoli, guacamole to dip & grilled meat (chicken/steak/pork/bacon/sausage/ham/turkey)
-Bone broth: save your bones and add carrot, celery, onion, garlic and let it simmer for up to 24 hours and sift out the bones & vegetables
Crockpot overnight cooking – cook on low over night & wake up to the smell of breakfast!
Mixed eggs, ground sausage, shredded yams or sweet potatoes, diced onions
Mixed eggs, diced sausage, chopped green onions, shredded zucchini
Mixed eggs, diced bacon, chopped peppers, chopped onions, spinach, shredded sweet potatoes
Add any seasonings that you like, my go-to seasonings are onion powder, garlic powder, red pepper, sea salt and black pepper. Cajun spices are often pretty tasty in these types of dishes. Topping it off with salsa, avocado, olives are also quite delicious!
Egg scramble ideas – sauté in the following items using either bacon fat, coconut oil, or grass fed butter.
Veggies: peppers, onions, green onions, spinach, yams, sweet potatoes, zucchini, yellow squash, mushrooms, baby kale , broccoli, asparagus, grape tomatoes, avocado, garlic
Proteins: ground sausage, taco seasoned beef or ground chicken/turkey, minced bacon, minced ham, shredded chicken, shredded beef
Toppers: cilantro, chives, salsa, avocado, parsley, basil, hot sauce, guacamole, roasted garlic
