Mini Meatloaf “muffins” with shredded carrot, zucchini & onion

Cooking can be fun & fast! 🙂 I love meatloaf but we are going out-of-town this weekend and I want to be sure I have some road snacks to eat as well as food for the event we are going to watch.  I am making up a batch of meatloaf but mini style. Preheat the oven to 350 degrees.

1lb ground turkey
1lb ground beef
1 zucchini shredded
1/2 yellow squash shredded
1 carrot shredded
1/2 onion finely chopped
1 garlic clove minced
1 egg
1 tbsp fat (bacon fat, butter, coconut oil)
1 tsp Cajun spice
1 tsp onion powder
1 tsp garlic powder
sea salt & pepper

Sauté the shredded vegetables as well as the chopped onion & minced garlic in a pan for about 5-8 minutes in your choice of fat. Once that is cooked through, hand smash your meats together adding in the seasonings. Once your sautéed vegetables have cooled a bit, toss them into the bowl with your seasoned meat and mash that mix up! Add in the egg and give it one more hand mash-mix. Disperse meat mix into the muffin pan evenly. With the leftovers you can wait for a second batch of meaty-muffins or put it in a smaller cooking pan and cook them at the same time. Cook for 35 minutes
