Marinara & Meat Spaghetti Squash

celebrateeverydaywellness.comSpaghetti squash is so versatile. I can’t say enough good things about it. It has some great nutritional components in a serving, for example it has potassium, B6, Vitamin C, Vitamin A, Calcium just to name a few. I was in the mood for something warm and Italian like so I made a Marinara & Meat sauce for the spaghetti squash.

Ingredient line up:
Spaghetti squash
1 can of organic diced tomatoes, no salt added
1/4 cup full fat canned coconut milk
1 teaspoon Rosemary
1 tablespoon Italian seasoning
1 teaspoon Sea salt
Dash of pepper
2 table spoons Butter
1 table spoon minced Garlic
1 lb grass feed beef or ground turkey or ground chicken

Instructions:
Pre heat oven to 450
Cut squash in half, scoop out the seeds, place squash open side down in a glass pan with about 1/2-3/4″ water in the bottom of the pan
Cook for 35-40 minutes
At about 10 minutes left on the clock for the squash, start cooking your meat on medium-low
Drain fat
Add in garlic & seasonings let it cook for about 5 minutes add in the coconut milk, canned tomatoes
Once the spaghetti squash is finished cooking, pull it out, drain the water, flip it over and add butter to the hot squash and let it melt
Start shredding the squash and add it to the marinara meat mixture
Let it all cook together for another 5-10 minutes on a medium-low heat, add any additional seasonings to complete your tasty dinner!
