Meatball madness

Why do things taste better when they are shaped in a small ball form? It’s like bite-sized pieces of goodness. I made meatballs to have on hand for quick protein snack.

Here’s the 411 on quick meatball madness:
Preheat oven to 425
1/2 pound ground beef
1/2 pound ground turkey (you can also use ground chicken/pork)
1 egg
1/2 tsp Onion powder
1/2 tsp Sea salt
1/2 tsp Garlic powder
1/2 tsp Fennel seeds
1/2 tsp Sage
1 cup of the following –
Grated carrot, grated onion, grated zucchini (or other veggies you like)
2 tablespoons of fat (olive oil/ghee/butter/ bacon fat/coconut oil)
small handful of chopped up walnuts (I smashed mine with a muddler) – optional

Saute the grated veggies in the fat of your choice for about 5-8 minutes until they are cooked all the way through. Optional to add a bit of garlic to the mix.

In a mixing bowl, combine meats, seasoning, veggies, walnuts and egg mix well with your hands. Roll meat into small bite-sized balls or larger meat balls if doing more of an entree. I made medium sized meatballs which made 12 with a total of 1 lb meat.

Cook for 25 minutes
