Pickled Red Onion

What you need –

  • 1 red onion, sliced
  • 1/2 cup apple cider vinegar
  • 1/2  teaspoon salt
Directions –

Blanch 1 sliced red onion in a small saucepan of boiling water
Cover for 1 minute and drain in a colander
Once drained – return onion to the saucepan and add the apple cider vinegar, salt, and just enough cold water to barely cover the onions
Bring to a boil over high heat and simmer the onions 1 minute
Transfer the onion to a glass jar
Let cool, place lid on it and you can store them in the refrigerator for a couple of weeks
