I love mornings and I LOVE breakfast! Today I opted to go without eggs and I couldn’t have been happier. This mash-up only takes about 10 minutes if that. I had the sausage already pre-cooked so that was helpful from a timing standpoint.
1/2 Zucchini, shredded
1/4 onion chopped
1 cup spinach
1 Tbsp fat (bacon/coconut/butter)
1/2 cup sausage
Sea salt, pepper, red pepper
Melt fat in the pan, add zucchini, onion and spinach until sautéed, throw in sausage and seasoning. Voila. SO GOOD!
