Broiled Mustard Tilapia

I was having a friend over and have been really in the mood for fish lately. Time to try some new recipes! I stumbled across this awesome website and found to recipes I modified slightly but here’s what I did and you can find the original recipes on her website.

Broiled Mustard Tilapia (she used Sole)

  • 1.5 lbs sole fillets (I just used 2 Tilapia fillets)
  • 1 tsp olive oil
  • 1/3 cup mustard (she called for Dijon mustard but I didn’t have that)
  • 1 tbsp honey
  • 1/2 tsp dried thyme
  • 1 tbsp lemon juice

Broil for about 4 minutes and check. And voila, easy-peasy.

Rosemary Garlic Sweet Potatoes

1 Sweet potato
1 tsp of olive oil
1 teaspoon of ground cumin
Salt to taste

Heat oven to 425 and cook. I like mine to be a bit crispy and I actually added too much olive oil so….don’t do that. I also chopped my sweet potato up so it was more of a rosemary garlic hash instead of a fry but either works. Great for left overs!
