Meatloaf Madness

I made meatloaf last night and it was one of my better creations. I read a few different recipes and then made my own mash of all of them. Recipe was as follows (approximately as I didn’t measure much of anything)

1 lb grass-fed beef
1 lb ground chicken (or ground turkey)
1 egg
Dash of sea salt
1/2 cup almond flour
1/3 cup coconut flour
finely chopped celery stalk (about 1 1/2)
finely chopped baby carrots (about 8)
chopped onion (about 1/2 a walla walla onion) – we like onions
Tbsp minced garlic – maybe a little more than that actually
Few shakes of parsley flakes
Few shakes of oregano
A squirt or two of organic ketchup (optional)

Now mash the heck out of that mess! With your hands, get up in it and get dirty. It’s kind of fun actually. Place in a meatloaf pan and bake at 350 for about 60 minutes. I took a before and after picture and dinner was delightful! Happy eating to you all :)
